Colorful bowl with turmeric dressing

  • 200 g Sweet potato
  • 100 g Broccoli
  • 4 Cherry tomatoes
  • 3 Radijsjes
  • 50 g Quinoa
  • 3 tbsp Low-fat yoghurt
  • ¼ tbsp Turmeric
  • Salt & pepper
  1. Preheat the oven to 200°C.

  2. Cut the sweet potato and broccoli into bite-sized pieces. Cut the tomatoes and radishes into quarters.

  3. Divide the sweet potato and broccoli over the baking tray and season with salt and pepper. Bake the vegetables in the oven for about 25 to 30 minutes.

  4. Meanwhile, prepare the quinoa according to package directions.

  5. For the dressing, finely chop the garlic and mix with the yogurt. Season with salt, pepper and turmeric.

  6. Maak vervolgens de bowl: verdeel de veldsla over het bord. Voeg dan de quinoa, zoete aardappel, broccoli, tomaten en radijsjes toe. Als laatste sprenkel je de dressing over het geheel.
